Ingredients

Adjust Servings:
1 lb (.45kg) Pancetta
2 Tbsp Olive Oil
4 oz (or bacon or ham) (115g) Pancetta
3 Garlic Cloves
4 Egg Yolks
1 cup (grated) Fresh Parmesan Cheese
Cracked Black Pepper
1 handful Fresh Parsely

Spaghetti alla Carbonara

This quick and easy spaghetti carbonara dish is a perfect weeknight dinner that everyone will enjoy. I always make it if I have leftover bacon or ham.

Cook the Pasta Noodles

Bring water in a large pot to a boil. Add salt and the noodles and cook for 8-10 minutes.

While the pasta is cooking, dice the pancetta, bacon or ham. Heat the oil in a large pan and saute until crispy.

Peel and crush the garlic, then add to the pan.

Drain the spaghetti noodles and reserve 1/2 cup of the pasta water.

Add the noodles to the pan and toss. Add the egg yolks and toss well on low heat. If you want a creamier, thicker sauce, add the pasta water. Add the freshly grated parmesan cheese and toss. Add cracked black pepper.

Top with chopped fresh parsely and more parmesan cheese.
