These baked breaded chicken tenders and pickles are not only healthy, but they are so crispy, you'd never guess they were baked!

Marinate the Chicken

Marinate the chicken for 2+ hours in milk with fresh lemon juice.

Prepare the Pickles

Lay the pickles on paper towels until they are dry.

Make the breading

Crush the chips. Add all the dry ingredients.

Bread the Chicken and Pickles

Dip all pieces in flour, then egg and pickle juice, then breading. (for the pickles, it helps to peel them first). If desired, for extra crunch spray with olive oil.

Bake the Chicken and Pickles

Bake at 400°F/204°C for 12-15 minutes. With a convection oven setting - 10 min.
