Peel the ginger, garlic and onion. Chop the spring onion. Put the ginger, garlic, spring onion whites, chili and sugar in a bowl and mix to a paste - the best would be with a mortar and pestle, otherwise you can use the back of a spoon or a spice grinder. Extract the lime juice and add. Then add the soy sauce, oil, and 2 Tbsp of water and stir until dissolved. |

Chop the peanuts and remaining vegetables and herbs. Toss with the dressing and serve. Suggested accompaniment: grilled steak or chicken. |
