Preheat oven to 400°. Peel and dice the potato and onion. Melt the butter in a cast-iron skillet (or other oven-safe pan) over medium heat. Add potatoes and onion and cook, stirring occasionally for 10-12 minutes. |

Whisk eggs, cream, grated cheese,1/4 cup of Parmesan cheese, a pinch of salt and black pepper. |

Pour mixture into skillet and let cook for 3 minutes. |

Transfer to oven. Bake until golden brown, 10-12 minutes. |

Sprinkle remaining Parmesan cheese on top and serve. |
