How to Roast Garlic and Make Roasted Garlic Paste

Roasting garlic will enhance your dishes, giving them a more deptsh and flavor. Roasted garlic turns into a paste and is great for spreads and in pasta sauces.

Special Equipment

A ceramic or terra cotta garlic roaster or tin foil. (This garlic roaster also can be used as a tortilla warmer: Norpro Garlic Baker/Tortilla Warmer.

If using a garlic roaster, let it soak in water for 15 minutes. Cut the top of of the garlic bulbs. Place the head of garlic in the roaster or in tin foil. Drizzle with olive oil. (Optional - you can add a sprig of Rosemary or Thyme for extra flavor.). Close the lid (or seal the foil) and bake for about 1 hour.

Once roasted, you can take each clove and pinch out the roasted garlic paste. It stays fresh for about 3 days refrigerated.
