Ingredients

Adjust Servings:
1.5 lbs (Idaho/Russet) Potatoes
3 Tbsp Olive Oil
1 Tbsp Salt
1 tsp Black Pepper
2 Tbsp Sweet Paprika
Chili
1 lb Ground Beef
1 can (drained) Kidney Beans
1/4 cup Tomato Paste
1/4 cup Beef stock
6 Tomatoes
1 Onion
1 Tbsp Olive Oil
3 Garlic Cloves
1 tsp Cumin
1 tsp Coriander
1 tsp Smoked Paprika
1 tsp Dried Oregano
Salt
Black Pepper
2 cups shredded Cheese

Homemade Loaded Chili Cheese Fries

If I'm in the mood for some ooey gooey goodness, I make loaded chili fries!

Make the French Fries

Make the Chili

Dice the onion and mince the garlic. Saute in a pan with the oil. Add the ground beef and saute 3 minutes. Dice the tomatoes (remove seeds first) and add. Add beef broth, tomato paste, beans, and spices. Let simmer for 45 minutes.

Load the Fries

Load the baked fries with the chili, top with cheese, and broil in the oven for 3-5 minutes until the cheese has melted.
