2 cups (your fav. kind, e.g. sharp cheddar, mozzarella...) Shredded Cheese

Cook the bacon, jalapenos, and spring onionsPreheat the oven to 425°F/218°C. Put the bacon on a large baking sheet - I line mine with parchment paper. Remove the seeds from the jalapenos and finely dice. Chope the spring onions or scallions. Add them to the baking sheet. Bake for 20 min. Flip the bacon if needed and continue baking if needed, dep. on your oven settings - the timing dep. on if you use the convection setting - which really quickens the cooking time, and you can also speed it up with the broiler setting. Once cooked, remove and place the bacon on paper towels to absorb the extra fat, then chop into pieces. |

Cut the Sourdough BreadTurn the oven down to 375°F/190°C. Slice the sourdough bread like a chessboard with a sharp knife, almost to the bottom. Some pieces may already fall out, which is OK. |

Stuff the Sourghdough BreadGenerously pour the pizza sauce into all the cracks and cover all the pieces well. Stuff the cheese and the jalapeno/bacon/spring onion mixture throughout. |

Bake the Pull-Apart BreadMelt the butter and spread on the top of the bread. Bake on a baking sheet (I use parchment paper - the bread will stick to foil) for 20-25 minutes or until the cheese is nice and gooey. |
