12 pc., boneless, skinless Chicken Tenders
12 pc. Bacon
1 1/4 cups Dark Brown Sugar
2 tsp, sweet or smoked Paprika
1 tsp, or chili pepper Cayenne Pepper
1/2 tp. Black Pepper
1 tsp. Salt

Crispy Brown Sugar Bacon Wrapped Chicken Tenders

Preheat oven to 350°F / 176°C.

Make the Rub

In a large, shallow bowl combine 1/4 cup of the brown sugar and all the spices and mix well.

Prepare the Chicken

Pat chicken dry. Roll each piece in the rub. Wrap one piece of bacon tightly around each piece. Put the remaining brown sugar in the bowl, roll and coat the bacon-wrapped chicken on all sides.

Bake the Chicken

I use a baking tray basket so the bottoms also get crispy. There will be sugar and bacon fat drippings, so make sure you have a tray underneath it with parchment paper. If you are using a normal tray, line it with parchment paper (I would not use foil - the sugar would stick to it and/or burn on to it). Arrange on tray and bake for 25 minutes.

Make the Bacon Extra Crispy

Put the oven on Broiler. Broil the chicken another 3-6 min. depending on how good your broiler is (mine took 6 minutes - it's an old oven!) Flip the chicken over and do the same. Serve warm.
