Make the Creamy Vanilla Frosting FillingBeat all ingredients until smooth, apprx. 3 min. Lnie a baking sheet with parchment paper. Using a piping bag or a spoon, divide the filling into 12 circles - flatten with the back of a spoon. Freeze for 2 hours. |

Make the Red Velvet Cookie DoughPreheat the oven. Line 2 baking sheets with parchment paper. Melt the butter. Mix the all the wet ingredients including the food coloring. Combine the dry ingredients separately then add gradually to the mixture. Fold in the white chocolate chips. |

Assemble and Bake the CookiesUsing an ice cream scoop, a spoon, or your hands, form 12 large balls and flatten. Add one frozen disc of frosting filling to each one. Wrap the edges of the dough up and around the filling to seal. Bake for 8-10 minutes. Allow to cool before serving. (For perfectly round cookies, after baking, immediately use a round cutter to smooth the edges if desired.) |
