2 Tbsp minced, optional Fresh Mint Leaves

Refreshing Watermelon Sorbetto Sorbet

The difference between sorbetto and gelato is that sorbetto is made with sweetened juice, fruit puree, and/or water and is denser than gelato. You can also serve this in small portions to cleanse the palette between meals - add fresh mint for extra kick!

Make the Simple Syrup for theSorbetto

Combine 2 cups of water and 2 cups of sugar in a pot over medium-high heat. Whisk constantly until the sugar dissolves. Reduce the heat to medium and let simmer for 5 minutes. Remove and let cool one good hour.

Once the syrup has cooled, cut the watermelon, remove the seeds if necessary, and dice into cubes. Put in a blender. Squeeze the juice of one lemon and add to watermelon. Add the sugar syrup and blend. If desired, chop fresh mint and add. Transfer to the ice-cream machine bowl and churn following the manufacturer's directions.

When finished churning, transfer to an airtight container and freeze 2 hours before serving.
