2 lbs (1kg) Rainbow Carrots or standard orange carrots
2 Tbsp Olive Oil
Salt
Black Pepper
2 sprigs Fresh Rosemary
1/2 cup Pure Maple Syrup

Rosemary and Maple Glazed Rainbow Carrots

You can of course use regular orange carrots for this maple glazed recipe. The only difference besides the optic is that rainbow carrots have more of an earthy flavor and I find orange carrots to be a bit sweeter.

Steps

Preheat the oven to 425°F/218°C. Line a baking sheet with parchement paper.

Peel the carrots. You can leave them whole, including the stem for an optical effect, or slice or dice them however you want. In my picture, I sliced them lengthwise in thirds.

Arrange the carrots on the baking sheet. Season them to your liking with salt and pepper. Toss with olive oil. Roast for 15 minutes.

Meanwhile, chop the rosemary.

Remove the carrots from the oven and toss with the maple syrup and rosemary (you can do this directly on the sheet). Return to the oven and roast for another 8-10 minutes (on the middle or lower rack to ensure the maple syrup doesn't burn).
