2 lbs (1kg) Rainbow Carrotsor standard orange carrots

2 Tbsp Olive Oil

2 sprigs Fresh Rosemary

1/2 cup Pure Maple Syrup

Preheat the oven to 425°F/218°C. Line a baking sheet with parchement paper. |

Peel the carrots. You can leave them whole, including the stem for an optical effect, or slice or dice them however you want. In my picture, I sliced them lengthwise in thirds. |

Arrange the carrots on the baking sheet. Season them to your liking with salt and pepper. Toss with olive oil. Roast for 15 minutes. |

Meanwhile, chop the rosemary. |

Remove the carrots from the oven and toss with the maple syrup and rosemary (you can do this directly on the sheet). Return to the oven and roast for another 8-10 minutes (on the middle or lower rack to ensure the maple syrup doesn't burn). |
