Cook the Skirtsteak or FlanksteakRemove the fat layer. Cut against the grain into thin strips. Toss in corn starch and soy sauce. Add the roasted garlic to a cast iron skillet, or mince fresh garlic with 1 Tbsp oil. Cook 1 minute, then add the beef. Add more soy sauce, season with black pepper and cook 2 minutes - should be medium rare and tender. Remove and set aside. |

Cook the Carrots and CabbageMix more cornstarch with 1/2 cup water and more soy sauce and go chu jang. Shred the carrots and add to same pan with sauce. Add cabbage. Season with black pepper. Add more salt if desired. Cook 10 minutes. |

Add the beef to the pan and stir well. Season with more go chu jang if desired. Top with sesame seeds and chopped cilantro or green onions. Serve with rice. |
