1 small piece Fresh Ginger

2-3 Tbsp Sambal Oeleksubstitute - red pepper flakes

3/4 cup Chicken Stock

1 tsp Rice Wine Vinegar

1 Tbsp Brown Sugar

1 tsp Sesame Oil

1 Lime

(garnish) Green Onions

In a wok or large pan, add 1 Tbsp oil and saute pork (season with salt and pepper) for 5 minutes. Remove from pan and set aside - it will not be fully cooked! |

Slice the onion, mince the garlic. In the same wok or pan, add 1 Tbsp oil, add the onion and garlic and saute. Meanwhile, slice the zucchini, then add to the pan and saute for 5 minutes. (season with salt). |

Make the Spicy Sambal Oelek SauceCombine the chicken stock with the soy sauce, sesame oil, brown sugar, sambal oelek (add 2 or 3, or more Tbsp to your desired level of hotness) and rice wine vinegar. Grate a bit of fresh ginger and add. Juice 1/2 a lime and add. |

Add the sauce and the ground pork back to the wok and mix. Cook for another 5 minutes. |

Serve with spring onions and sesame seeds over a bed of rice. |
