1/2 cup (eg Sauvignon Blanc) Dry White Wine

1 block Feta Cheese

Preheat the oven. Season the chicken well with salt and pepper. Saute the chicken for 2 min. on each side in 2 Tbsp of the sun-dried tomato oil and minced to make a crispy crust. |

Deglaze with the wine. Add the diced tomatoes and diced sun-dried tomatoes. Season again with salt and pepper. Add a bit of chopped basil. Top with crumbled feta cheese. Bake for 15 minutes with the lid on at 375F. |
