1/4 cup Salt

2 cups Granulated Sugar

1 cup White Vinegar

1 Cinnamon Stick

1 Lemon

1 1/2 tsp whole Cloves

3 Maraschino Cherries

Remove the skin from the rind. and cut into cubes. |

Put the rind cubes into a large container or bowl with the salt and water so that the water covers the rinds completely. Leave overnight. |

Drain and rinse the rind, then put the rind in a sauce pan with t1/2 cup water, the vinegar, sugar, sugar, cinnamon, cloves, and cherries. Simmer on medium-low heat until tender, about 30 minutes. |

Add the juice of 1 lemon, stir well . Pour the liquid through a strainer and catch all the clove pieces and remove the cinnamon stick. Pour into glass jars and enjoy. |
