Ingredients

Adjust Servings:
approx. 1/3 cup Red Curry Paste
2 cups Jasmine Rice
3-4 Chicken Breasts
2 Tbsp Olive Oil
1 Onion
3-4 Carrots
Green Beans
1 tsp grated Fresh Ginger
3-4 Garlic Cloves
4-8 dep. on heat level Fresh Red Bird's Eye Chili Pepper
1 Tbsp Lemon Grass Paste
1 Tbsp Brown Sugar
1 Tbsp Soy Sauce
1/2 cup Chicken Broth
2 cans Coconut Milk
1 Lime
1/4-1/2 cup Cashews Optional - roast them first
1 bunch Fresh Cilantro
1 bunch (optional) Fresh Thai Basil
1/2 fresh Pineapple

Thai Pineapple Chicken with Cashews and a Coconut & Red Curry Sauce

My favorite dish at a local Thai restaurant serves a chicken pineapple curry dish called The Old Siam, which quickly turned into my favorite chicken coconut curry dish. I invented my own version for home cooks.

Make the Rice

Make the rice acc. to package directions.

Saute the Chicken

Sear the chicken on both sides (patted dry and seasoned with salt) in oil. Remove from pan. (they should not be fully cooked yet).

Saute the diced onion, minced garlic, crushed bird's eye chilis, and ginger.

Add chopped carrots and chicken broth and cook 3 min.

Add the coconut milk, red curry paste, lemon grass, sugar, and soy sauce. Stir and simmer for 5 minutes. Season to taste.

Cut the green beans and dice the pinneapple and simmer for 5 min. Dice the chicken and add to the curry sauce. Let simmer another 3-5 minutes.

Add the juice of 1 lime and stir, then add or top with toasted cashews and fresh chopped cilantro and Thai basil. Serve over rice.

Thai Pineapple Chicken Curry Variations

This Pineapple Chicken Curry also pairs well with bell peppers, zucchini, tomatoes, broccoli, and cauliflower.
