6 cups, cubed Watermelon See note below
1 English Cucumber
3 cups Cherry Tomatoes
1 Red Onion
2 Limes
2 Tbsp Olive Oil
2 Tbsp Honey
1 Bunch (1/2 cup) Fresh Mint Leaves
1 1/2 tsp Salt
1 tsp Crushed Black Pepper
6 oz (170g), or Feta Cheese, optional Goat Cheese

Cool Watermelon Tomato Cucumber Mint Salad

Dice the watermelon (make sure you remove any seeds if needed). I never measure the watermelon, I just eyeball it. You want a 2:1 ratio with tomatoes and cucumber vs. the watermelon in the end, so I usually just cut 4 large slices and that usually is enough for this quantity. Cut the cherry tomatoes in halves. Peel and dice the cucumber and red onion. Dice the mint leaves. Combine with the honey, the juice of 2 limes. and the olive oil and toss. Season with salt and pepper. If desired, mix with goat cheese or feta cheese. (If it is hot outside, the cheese, esp. the goat cheese melts quickly, so I opt to leave out the cheese when it is scorching hot outside).
