In a large mixing bowl, mix the flour, salt and lard with your fingers so the consistency becomes flaky. |

Either continuing with your hands, or with a stand mixer with a dough attachment, add the water gradually and let it mix until the dough becomes one smooth ball - this takes a good 3-5 minutes. |

Remove and knead the tortilla dough on a lightly floured surface with your hands for 2-3 minutes until the dough is smooth and elastic. |

Divide the dough into balls - depending on how large and thick you want your tortillas to be. This last batch I made were extra large tortillas and I made 8 of them. |

With a rolling pin (floured of course), roll each ball of dough into a circle. To get a perfect circle, roll away from you, then keep moving the piece of dough clockwise and roll once away from you each time. Keep rolling in a circular motion until you have the desired shape and thickness. Tip - if using a grill outdoors, I roll all the tortillas out first and place them on individual pieces of foil on baking sheets and keep them covered with a towel so that the tops do not dry out. If using a skillet, you can first heat the skillet and simultaneously roll one tortilla at a time while the other one cooks. |

To cook the flour tortillas on a grill: Pre-heat to medium-high heat and ensure that you grease your grates, otherwise the dough will stick easily (cooking spray, oil, or a combination of oil on a half of an onion). Lay each tortilla on the grill plate and let cook for about 1 minute on each side - it will start to bubble and you know it is time to flip. To cook the flour tortillas in a cast iron skillet: pre-heat to medium high. Do not add anything else to the skillet - it should be dry. Lay 1 tortilla on the hot skillet and cook until bubbles form, the flip and repeat on the other side. Remove from the heat and continue until all tortillas have been made. I recommend a tortilla warmer or keep the freshly made tortillas wrapped in a towel or foil to keep them warm. |
