2 Tbsp Olive Oil

4 oz (or bacon or ham) (115g) Pancetta

3 Garlic Cloves

4 Egg Yolks

1 cup (grated) Fresh Parmesan Cheese

Cracked Black Pepper

1 handful Fresh Parsely

Cook the Pasta NoodlesBring water in a large pot to a boil. Add salt and the noodles and cook for 8-10 minutes. |

While the pasta is cooking, dice the pancetta, bacon or ham. Heat the oil in a large pan and saute until crispy. |

Peel and crush the garlic, then add to the pan. |

Drain the spaghetti noodles and reserve 1/2 cup of the pasta water. |

Add the noodles to the pan and toss. Add the egg yolks and toss well on low heat. If you want a creamier, thicker sauce, add the pasta water. Add the freshly grated parmesan cheese and toss. Add cracked black pepper. |

Top with chopped fresh parsely and more parmesan cheese. |
