Bake the Sweet PotatoesBake the sweet potatoes in foil for 1 hour. Remove. Let cool, then mash. |

Mix the sweet potoates, eggs, milk, 3/4 cup brown sugar, melted butter, vanilla and pumpkin spice. Transfer to a casserole dish. |

Make the StreuselMix the remaining brown sugar with the flour and chopped pecans. For a lighter version, I do not add any more butter, but for something more decadent, add 2 Tbsp of cold butter and flake it in the streusel. Add to the sweet potato casserole mixture on top. |
