Make the Wonton/Dumpling DoughWhisk the egg, salt, and water. Add the flour and knead for 3-5 min. (I use a mixer). If the dough is too sticky, add a bit more flour. Cover with a damp towel and let rest for 1 hour, |

Make the Pork FillingGrate the ginger. Chop the green onions. Grind the pork. Add all with sesame oil. |

Roll out the Wonton/Dumpling DoughUsiging Cornstarch, and I personally use my Kitchenaid Mixer lasagne noodle attachment to roll out the dough, but you can use a normal rolling pin, roll out the dough (level 1 1 x, then level 2, and then level 3 - each dipped in corn startch as to not stick). Then, either cut into squares for wontons or circles for dumplings. |

Fill the wontons or dumplingsMake an egg wash with 1 Tbsp water and the egg. Using a brush, brush the sides of the shape with the egg wash, then fill lightly with the filling. Pinch closed. Set aside and continue. |

Steam the Wontons or DunplingsYou have several possibilities - you can first saute them in a pan with oil, and then steam them for 4-6 minutes, so that they are first browned on each side, or you can skip that and just steam them. Usings bamboo steamer lined with the parchment paper, steam for 8-10 minutes. Or, in a pan, add 1 cup of water and allow to steam in the pan for 8-10 minutes. I personally liked them better not having sauted them first. |
