Marinate ChickenJuice oranges. Combine about 1/4 cup orange juice, 1/4 cup soy sauce and 1 Tbsp cornstarch in a bowl. |

Sear the ChickenHeat the oil in a large skillet or wok over medium-high heat (to 375°). Remove chicken from marinade. Shake off excess marinade, then carefully add to the pan. Turn occasionally until golden brown, about 10 minutes. Do not overcrowd the pan. Depending on how large your pan is, you may want to cook the chicken in 2 or 3 batches. |

Make the Orange SauceWhile the chicken is cooking, combine the remaining soy sauce, cornstarch, vinegar, brown sugar, hoisin sauce, juice from the 3 oranges, and the ginger. Remove the chicken from the pan and set aside. Add the garlic and chili to the pan and cook for 1 minute. Topping idea - garnish with sesame seeds |
