Ingredients

Adjust Servings:
3 Oranges Or 3/4 cup orange juice
1/4 cup plus 1 Tbsp Soy Sauce
2 Tbsp Corn Starch
about 2 lbs,boneless, skinless Chicken Breasts
2 Tbsp Oil
1 Tbsp Rice Vinegar
2 Tbsp Brown Sugar
1 Tbsp Hoisin Sauce You can make your own homemade hoisin sauce with this recipe
4, crushed Dried Red Chili Peppers
1/2 tsp, grated Fresh Ginger
2, minced Garlic Cloves

Marinate Chicken

Juice oranges. Combine about 1/4 cup orange juice, 1/4 cup soy sauce and 1 Tbsp cornstarch in a bowl.
Cut the chicken into pieces, toss in marinade. Cover and refrigerate for 1 - 4 hours (recommended - if you're in a hurry, you can make it right away).

Sear the Chicken

Heat the oil in a large skillet or wok over medium-high heat (to 375°). Remove chicken from marinade. Shake off excess marinade, then carefully add to the pan. Turn occasionally until golden brown, about 10 minutes. Do not overcrowd the pan. Depending on how large your pan is, you may want to cook the chicken in 2 or 3 batches.

Make the Orange Sauce

While the chicken is cooking, combine the remaining soy sauce, cornstarch, vinegar, brown sugar, hoisin sauce, juice from the 3 oranges, and the ginger.

Remove the chicken from the pan and set aside.

Add the garlic and chili to the pan and cook for 1 minute.
Add the mixture to the pan and bring to a boil, stirring continuously until the sauce thickens, about 2 minutes.
Return the chicken to the pan. Optional - grate some orange zest over the chicken. Mix well and serve.

Topping idea - garnish with sesame seeds
