6 Sweet Potatoes
4 eggs
1 cup Milk
1 1/4 cups divided Brown Sugar
1/4 cup All-Purpose Flour
2 Tbsp Butter
1 tsp Pure Vanilla Extract
1 cup Pecans
1 tsp Pumkin Spice

Fluffy Sweet Potato Casserole with Pecan Streusel Topping

The addition of eggs makes this sweet potato casserole extra light and fluffy in texture.

Bake the Sweet Potatoes

Bake the sweet potatoes in foil for 1 hour. Remove. Let cool, then mash.

Mix the sweet potoates, eggs, milk, 3/4 cup brown sugar, melted butter, vanilla and pumpkin spice. Transfer to a casserole dish.

Make the Streusel

Mix the remaining brown sugar with the flour and chopped pecans. For a lighter version, I do not add any more butter, but for something more decadent, add 2 Tbsp of cold butter and flake it in the streusel. Add to the sweet potato casserole mixture on top.

Bake for 45 min.
