How to Make Crispy Homemade Fried Sweet Potato Fries

The secret to making crispy sweet potato fries is really just patience! Well, and cornstartch! FYI these go fast, so plan to make a double or tripple batch!

Prep the Sweet Potatoes

Peel and slice the sweet potatoes into equal pieces. I use a French fry cutter. They are the best and ensure uniformity and cut down the prep time.

Give your cut sweet potatoes 2 ice cold baths, approx. 2 min. each.

Boil a large pot of water. Add a pinch of salt and the sweet potatoes. Boil for approx. 4-5 min. Do not overcook. Remove and give them another cold bath.

Put the frying oil on the stove and make sure it reaches 350°F/176°C.

Make the cornstarch slurry coating

Mix 1 cup cold water with 1 cup cornstarch, salt and pepper. Toss the sweet potatoes to coat.

Fry the sweet potato fries in small batches - don't crowd the fryer, otherwise they will clump together. Again - patience here! it takes about 4-5 min. per batch to obtain the perfect crispiness. Remove and lay on a plate with a paper towel to absorb extra oil. Season again with salt and pepper.
